Recently my good friend Vor of Vordoo Cuisine and I were talking about our favourite comfort foods for the colder days, and of course I immediately thought of Latkes.
Latkes are the perfect food for Autumn and Winter and definitely not just reserved for Hanukkah.
Latkes
You will need:
10 – 15 medium sized potatoes
1 1/2 onions
4 eggs
1 1/2 cups of flour
Salt and pepper
Oil for frying
How to:
Peel and grate the potatoes and onions.
Mix the onion and potato very well.
Put the mix onto a tea-towel or cheese cloth and squeeze out as much juice as you can.
In a separate bowl beat four eggs and 1 1/2 cups of flour. Add salt and pepper to taste.
Pour the egg and flour mixture over the potato and onion and combine well.
In a frying pan heat some oil and drop spoon fulls of the Latkes mix.
Push it down gently with a fork and fry both sides until they are golden brown.
Serve with sour cream or cream cheese.

They are perfect! Especially with sunny-side up eggs! Dip them in the yolk. So good!

I really love the crockpot soup and home made bread combination for those chilly Autumnal days; nothing beats coming in from the cold at the end of long blustery walk, to find the whole house is warm and inviting, and smells like good soup! Actually, that is exactly what we have on the menu for this evening’s supper; sweet potato and butternut squash crockpot soup, with focaccia bread and Italian butter on the side … delicious!
We are still thinking about getting a crockpot, especially for these cold days. Butternut squash crockpot soup sounds amazing!
